Rince Dal till you see clean water. Soak in enough water for about 2-3 hours. After soaking water Dal should become more than double of its quantity ( like 1 cup should become 2 1/2 cups) Rinse it well again.
In pressure cooker put the Dal with turmeric powder, Salt, Methi seeds, crushed ginger and little water. Give one whistle of cooker. Remove from fire. Wait till the pressure is out. Open lid and check if the Dal is cooked. If still hard keep it covered with very little water in in microwave for about 7-8 minutes. Check it should not be mashy or uncooked. Remove the Dal in a colander to remove any extra water if left with the Dal. In a shallow fry pan, add ghee and fry red whole chillies till crispy and blakish brown. Remove from pan and keep them aside to be used later.
Add the garlic to hot the hot ghee in pan. fry till light brown. Add cut onion fry for little while and add cut green chillies, red chilli flakes, hing. May add little more Ghee here. Take out one spoon of this fried mixture for garnishing the ready Dal. Turn the boiled Dal on to the fried mixture. Stir mix very gently, so the grains remain whole and separately visible ( this is the beauty of this dish, that the grains remain separate and not mashy.) Sprinkle the garam masala and the Chat masala on Dal. Half of corriander leaves. Mix gently.
Arrange in a serving dish. Garnish with ginger strips, onion rings, coriander leaves, red chillies and slit green chillies. The lemon: either you may sprinkle the juice on Dal while mixing or you may serve by keeping pieces with the Dal.
serve with Roti or Parantha.
