Baked Vegetables (For Party)

Cauliflower
Butter Beans 100 g
Carrots preferably red ones
Potatoe (Small round ones) bit hard boiled and peeled 1/2 kg
Chinese Mustard Two bunch
Capsicums Green, Yellow & Red (one each)
Button Mushrooms 15-20 pieces
Fresh Open Mushrooms 5-6 pieces
Cashew Nuts Roasted in Salt & Butter 150 gms.
Fresh Cream 200 ml
Celery one stem with leaves

Corn Flour 2 tbl spn. (may adjust quantity )
Milk 1/2 litre
Nutmeg Powder 2 pinch
Black Pepper Powder 1/2 tspn.
Grated Processed Cheese (I use Britannia Cheese Block 400 g block for this
Grate the cheese pack for use in the dish
Butter 150 g

All Mixed Herbs 1 tsp.
Pizza Spice Mix 1/2 tspn.
White Vinegar 2 tbl spn.
(You may add vegetables of your choice which are not very juicy)

Lets start Now from cutting of vegetables
Cutting of vegetables is very important part of this recipe.
All Capcicums into triangle shape, discarding the white ribpart of it
Spring Onion into round shape
Carrots, mix shapes squares, rounds and some triangles
Both, cauliflower and the Broccoli into small flowerets
Chinese Mustard - the stempart into semi curves and the leafy part into irregular shapes but bit big pieces
Button mushrooms into thick slices, about four from one button mushroom
Open mushrooms from stem side towards open side 4-5 pieces
Boil water and start putting harder vegs first like carrot, beans and then add softer ones so that all are soften and not soggy. Leave sprong onions and celery leaves aside. Add salt one tea spoonfull and the white vinegar, shakethe vegetables well. Keep aside.
In a frypan/saucepan heat butter, add the preboiled and peeled small potatoes, stir fry till golden brown.
Sprinkle little mixed herbs, mix well. keepaside.
In a frypan on medium fire add the butter melt it, add 3/4 milk, cream, blackpepper, nutmeg powder, herb mix and boil.
Add cornflour in the rest of the milk, add to the boiling mixure. Boil till mixture thickened. Fold in about 225 g grated cheese. Fold in the boiled vegs, celery, and spring onions gently. Fole in the potatoes leaving 4-5 to be arranged on top while baking.
Take a large ractangle ovenware dish. Smear butteron on all over. Pour half mixture in dish. Arrange. Spread
some rosted cashew nuts and grated cheese. Put the balance mixture, top with little butter, make grated cheese
ribs on top as shown in pictiure.
See that different colours of vegs are visible in rows between cheese ribs, see picture. Arrange side lines with
cashews sprinkle a few cashew nuts here and there, they look beautiful
Bake in medium hot oven for 1/2 an hr or till the upper crust is golden brown, instead you may grill it as well for browning it.
To be served hot. Garlic Buns/Garlic Bread/ Paneer Kulche roasred in butter goes very well with it along with
a soupis full sumptous delicious meal
All tit bits left out of cutting into shape may be used to make soup to go with it
For Soup boil all side cuts of vegs with 5 clove garlic one small onion cut into slices, 1/2 inch ginger, one small potato, blackpepper, salt to taste. Blend in mixi not very thin, heat in a pan little butter, add 2 tbl. spn milk and
the soup mixture. Boil for 3-4 minutes serve hot
