Vegetarian Party Cake


 Ingredients:      (for the cake)
1.    9 ½ cups Sifted all- purpose flour
2.    2 cups coco powder (Not sweet one)
3.    2 cups vegetable oil (odorless less oil)
4.    6 cups sugar (White)
5.    6 cups water (at broom temperature)
Parat
6.    2 tablespoon coffee powder (I use Nescafe)
7.    2 tablespoon honey
8.    ½ teaspoon nutmeg powder      
9.    6 teaspoons baking soda
10.  1 teaspoon salt
11.  1 cup black current or raisins (seedless)
12.  4 cups broken walnut pieces
13.  1 cup peeled melon seeds
14.  1 ½ tablespoon cinnamon powder
 Method:
Pre heat oven to about 175 degree C, Grease a Parat
(The Indian Roti dough making utensil) or big baking tray. In a big glass bowl mix well all ingredients except walnuts, melon seeds and raisins. Fold in the walnuts, seeds and the raisins, Keep a small bowl upside down at the center of the Parat, grease outside of this bowl. Pour around it the ready cake mixture. Flatten the top of the mixture with wooden spatula.

Bake for 1 hr 10 minutes or till inserted knife comes out clean.
Melon seeds
Remove from oven, cool the cake, gently take out the center bown.
When cake is cold, Pour 3 cups of coke over it and leave it for soaking.

The yellow looking portion:
Ingredients
2 tins of 850 gm. Pineapple
2 cups fresh lemon juice (8 lemons)
2-3 pinch salt  
   cups sugar
1 ½ cup corn flour
1 teaspoon yellow food colour.
2 cup water

8-9 cups milk (adjustable )
4 cups custard powder
sugar to taste
2  tins of fruit cocktail or fresh mixed fruits of choice. cut into small pieces.

Red cherries, plain or sugar coated or in syrup
3 cups almonds, skinned, softened in boiled water. and cut from center to divide into halves.

Method :- Separate juice and the pineapple slices. Crush slices into very small pieces. Bit crunchy bit smooth paste. Mix corn floor Cut+ crushed pineapple pieces with the juice from tin, heat till it changes colour. Add sugar and the yellow coloue. Keep stirring while cooking. Will take 6-8 minutes. Remove from fire leave for 2-3 minutes add lemon juice.

In seperate sauce pan make the custard with milk , mix fruits, cool, add to the pineapple mix.

Pour around and in the center hollow olace of the cake as shown in picture. Garnisg/decorate with Cherries and almonds.
