Nan Khatai

 Nan Khatai 
Ingredients:

  1. 1 Cup All purpose flour (Maida)
  2. 1/2 Cup Chick pea flour (Besan)
  3. 2 1/2 Table spn. Samolina (Sooji)
  4. 1/2 Cup powdered Sugar
  5. 1 Pinch salt
  6. 1/2 Cup Ghee, Preferably Cow Ghee
  7. 1 Tea spn. crushed Cardamom
  8. 1 Table spn. Crushed almonds

      Method:
    Grind sugar with Cardamom
    In a big bowl, mix together item numbers 1 to 5 in the list above. Mix well with fingers. Add             Ghee to flour mixtures and bub till it becomes crumbly. Keep pressing the flour till you are able
     to form like loose ball, when pressed in fist, (see picture step 4). This will take about 10 minutes.
      Take little mixture press in fist and the make small round balls.  Keep all ball on flour dusted                plate. ( see steo 5) and press center of each ball with tip of thumb to make space to fill crushed           almond. (See step 5) Now with finger tip smear very  little water (Not more than a drop) ( step 6)         in the center of each ball and fill it with crushed almonds. ( step 7).
   In microwave on conviction, keep the arranged tray and bake at 180 degree for 16-17 minutes.
  The balls will turn beautiful golden brown. Remove. keep out side, leave them for 1-2 minutes
  in the tray and then . Very gently remove from, as they are very tender, you may use back of knife
  to move each Naam Khatai.
 May store Nan Khatai when cool. Shelf life is 4-5 days.
