Savory Vermicelli (Namkeen Saviyan)


         Ingredients:

        SavoryVermicelli (Saniyan) One packet 300 gms.
  • 1.   Red Onion one large sliced 
  • 2.   Green Peas ½ cup 
  • 3.   Spring Onion Green and white portions ½ cup 
  • 4.   Broccoli 10-12 Florets 
  • 5.   Carrots cut into small cubical shape ½ cup 
  • 6.   Beans (tender) cut into small pieces ½ cup 
  • 7.   Boiled/ fried Potatoes cut into small pieces 1 cup 
  • 8.   Yellow Bell-Pepper 1/2, chopped(optional) 
  • 9.   Red Bell-Pepper ½ chopped 
  • 10. Cauliflower 12-15 Florets (optional) 
  • 11. Raisins 2 tbl.sp. 
  • 12.  Green Chillies 2-3 cut length-wise. 
  • 13.  Coriander leaves chopped along with tender stems. 
  • 14.  Black Mustard Seeds 1 Tsp. 
  • 15.  Cumin seeds ½ tsp. 
  • 16.  Turmeric Powder 1 Tsp 
  • 17.  Red Chili Flakes (Kuti Mirch) ½ Tsp. or to taste 
  • 18.  Coriander Powder 1, Tsp 
  • 19.  Garam Masala 1 Tsp. 
  • 20.  Raw Mango (Amchoor) Powder 1 ½ tsp. 
  • 21.  Lemon Juice 3 Tbl.Sp. 
  • 22.  Ginger Julien Little For garnish and taste 
  • 23.  Salt to taste 
  • 24.  Olive oil /Sun Flower oil or of your choice 2 ½ Tbl. Sp. 
  • 25.  Ghee 1 Tbl Sp. (optional) 
  • 26.  Water (3 Cups) 
            Method:
In deep Fry Pan [Karahi] drop one Tsp. Oil and lightly roast the Saviyan. Remove from pan and in the same pan put the rest of the oil. Add mustard seeds heat till splatter or change colour. Add sliced red onions and cumin seeds. Fry till brown. Add the vegetables first the harder ones and then the softer ones as all take different cooking time. (Pic.3). Sprinkle Turmeric, Coriander and Chili. ( Pic 1-2) on Vegetables. Stir-fry for 3-4 minutes. Add water, leaving aside little to be added at the end, if required and avoid Saviyan becoming soggy.(Pic. Add the Garam Masala and Mango powder to Saviyan. Cover the material. Cook on medium fire for about 3-4 minutes and the on sim for another 2-3 minutes. Add Lemon juice. Arrange in Deep pan Garnish with Coriander leaves and Ginger Julian. 
Serve hot as heavy snack. (Goes well – Breakfast time or with Evening tea after office time.)  For sure good results sometime I boil Saviyan for few minutes, drain, add cold water on and a few drops of oil to make sure they don’t stick while preparation.
