Ingredients to Boil Dal with:
Ingredients: to be used at boiling time:
1 ). Cup Arhar Dal ( 1 1/2 cup after soaking)
2). ¾ Tea spoon Turmeric powder,
3). ½ Tea spoon Methi seeds (Fenugreek )
4). ¾ Tea spoon or to taste salt,
5). Water 2 cups
Process:
Rince Dal very well till you get clean water, no cloudy. Soak for 20 minutes in normal room temperature water. Rince again nicely and put it in pressure cooker. Add turmeric, methi seeds,
salt and 2 cups water and pressure cook till 4 wistles. Let it cool till pressure is down. Open the cooker lid and boil without lid for 3-4 minutes to make dal bit meshy ( Little grains and little slurry type) Turn into a serving bowl.
Now Make the tempering ( Chhaunk)
Ingredients for tempering: 1).1 Twig, Curry leaves, 2). 6-7 cloves garlic cut into pieces,
3). 3 Green cut chillies 4). 3 - 4 Whole red chillies, 5). ¾ tea spoon chili flakes ( Kutti Mirch) 6). 1 Medium onion chopped, 7). 2-3 Pinch Hing ( Asafoetida) 8). Ghee 3-4 Table spoons or may use bit less or more upto taste.
Process:
In a tempering pan add ghee deep fry the red chillies till crispy and dark brown, bit on blakish side. Remove from oil and keep aside as shown in picture. Add the cut garlic to oil and fry on medium fire too pink-brown. Add onion and fry till pink and add green chillies chillie flakes, hing fry till brown. Add the curry leaves. Just stir remove from fire. Pour little more than half mixture on the cooked dal and stir mix well. Now for garnishing Pour the remaining tempering material and place the fried red chillies at center as shown in picture. Enjoy Hot with Roti or Boiled rice.
Please Note Quantity of water and number of whistles may vary a bit as per softness or hardness of local water.
