Crunchy Hot, Sweet n Sour Tomatoes
Ingredients:
- 6-8 Tomatoes
- 1 Medium size Onion
- 6-7 Cloves garlic cut into small pieces
- 2 Green Chillies or to Taste
- 1 ½ Table spns. Chopped fresh corriander leaves
- 1 Tea spn. Zeera (Cumin Seeds)
- 1 0r 1 1 ½ Table spns. Sugar
- ½ tea spn. Kala Namak (Black Salt/ Pink salt)
- ¾ th Tea spns. Kuti Mirch (Chillie flakes)
- 1 Tea spoon cut or about 1 Inch ginger cut into very small pieces
- Salt to taste
- 4-5 Laungs ( Cloves)
- 2 Table Spn cooking oil
- ½ cup water
- 1 Tea Spn. white vinegar ( Optional
Cut tomatoes into halves or into three pieces.. Keep in glass bowl (donga), Pour ½
Cup water. Cover and microwave for 7-8 minute, or till skin becomes loose to be removed from tomatoes. This depends upon the hardnes / Freshness of tomatoes. Cool. Separate skin from the tomato pieces. Crush the tomatoes. Leaving bit crunchy. Not to make smoothy. Keep the extra water to be utilize at later stage. (If needed) Keep on fire a shallow frypan. Put 1 ½ table spn. cooking oil, add cumin seeds (jeera), roast till done, add garlic and cloves, fry till golden brown.
Add onion, green chillies, and ginger. Stir fry till onion becomes light golden. Add kuti Mirch. Stir fry a little. Pour the crushed tomatoes on it. Cook on medium fire for little while, add water add black salt, coriander leaves and sugar. Taste and may add more sugar if you prefer. its to individual taste. Keep stirring for little while on intervals. I use vinegar sometimes but not always, Adding vinegar increses its frig life and enhances a bit soury taste. You may taste and decide. You can make extra quantity and keep in frig. Frig life is upto 7-8 day. Good side dish. Can serve hot or cold.
