Dahi Podina Aaloo ( Potato with curd and Mint)

Dahi Podina Aaloo ( Potato with curd and Mint)

Ingredients:

7-8 Boiled Potatoes ( Broken into small pieces, (Use fingers and not knief) )
2-3 Cups, Bit Sour Curd ( with little water or 2 Tblspn milk)
Fresh Mint leaves or Tender Curry Leaves
About Hand full Pea nuts fried or roasted
1/2 Tspn. Green Chili paste or to taste
1/2 Tspn. Finely Crushed or chopped Ginger  
1 whole Red chili
1 Tspn oil

In a fry pan, fry the whole red chili till darkish in colour and crispy. Remove from fire crush it with fingers into uneven pieces. Add Peanuts to the fry pan, in the same oil you fried red chili, stir fry till crisp, add the chili paste paste and ginger and the crushed red chili.  Switch off fire add leaves, curd and the potatoes, mix well. Cool for 1/2 an hour in frig and serve.
Can serve on room temperature as well.
